Ingredients

  • 2 sweet potatoes washed and diced
  • 2 tsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 can chickpeas or black beans drained and rinsed
  • 2 cups baby spinach or kale loosely packed
  • 1 medium zucchini diced
  • 1 medium squash diced
  • 1 red bell pepper diced
  • ½ cup mushrooms sliced
  • 1-½ tsp garlic powder
  • ¼ cup chopped leeks
  • ½ tsp smoked paprika
  • sprinkle of rubbed thyme
  • 3 splashes of gluten free tamari sauce
  • a pinch of chili flakes

Step by Step Instructions

Step 1
Add the potatoes and oil to a large skillet on medium heat. Toss with salt and pepper.
Step 2
Sauté the potatoes until tender and browned (about 25 minutes.) Toss every 5 minutes or so.
Step 3
Add the remaining ingredients into the skillet except for the beans and spinach. Sauté until the vegetables are tender (about 10 minutes.)
Step 4
Toss in the chickpeas and spinach. Sauté for an additional 3-4 minutes, or until the spinach is wilted.
