Ki’s Lemon Poppy Seed & Blueberry Overnight Oats

Ingredients

  • â…” cup blueberries (fresh or frozen)
  • 2 Tbsp chia seeds
  • â…“ cup old-fashioned rolled oats or steel-cut oats
  • 1 tsp poppy seeds
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp raw unsalted pumpkin seeds (or sunflower seeds)
  • 1 tbsp sliced almonds
  • ground cinnamon, ginger, and nutmeg to taste
  • non-dairy milk of choice
  • ¼ tsp vanilla extract

Step by Step Instructions

Step 1
In a large bowl add all ingredients except the berries. Mix well.
Step 2
Divide the mixture between two 250ml mason jars
Step 3
Top each jar with the berries
Step 4
Fill the jar with milk to the neck of the jar
Step 5
Store overnight in the refrigerator for up to 4 days
Step 6
To serve, empty into a bowl then heat the overnight oats in the microwave or on the stove to get warm. Top off with 1 tsp raw honey or maple syrup if desired and extra fresh fruit.
