Ingredients

  • 1 heaping tbsp tahini paste
  • small amount of water approx. ¼ cup
  • 2 tbsp maple syrup
  • 1 tbsp fresh flat leaf parsley chopped
  • salt and black pepper to taste
  • 1 large pinch of thyme
  • ¼-½ tsp of granulated garlic or 2 fresh cloves garlic peeled and pounded
  • 1 handful fresh dill chopped (no stems)
  • 1 lemon juiced and zested
  • 2 tbsp apple cider vinegar

Step by Step Instructions

Step 1
Mix tahini paste with water, stirring constantly to achieve desired consistency. **NOTE at first the paste will appear broken, but keep stirring and adding water in splashes at a time until it pours easily from a spoon.
Step 2:
Add all other ingredients, mix well and taste for seasoning. Add whichever of the flavours you’re not unable to detect. The sauce should be a bit sweet with a hint of bitterness and tartness.
Step 3:
Store in a glass jar in the fridge for 5 days.
