- 1- 1.5 cups fresh flat-leaf parsley chopped
- 1 cup fresh cilantro chopped
- 1 handful of fresh mint chopped
- 1 cup millet or quinoa or bulgur or freekeh boiled according to package directions in stock and cooled (make this ahead of time)
- 1 cup tomatoes seeded and diced
- 2 sprigs green onions finely chopped pink salt to taste
- 3 tbsp - ¼ cup fresh lemon juice
