Ingredients

  • 1- 1.5 cups fresh flat-leaf parsley chopped
  • 1 cup fresh cilantro chopped
  • 1 handful of fresh mint chopped
  • 1 cup millet or quinoa or bulgur or freekeh boiled according to package directions in stock and cooled (make this ahead of time)
  • 1 cup tomatoes seeded and diced
  • 2 sprigs green onions finely chopped pink salt to taste
  • 3 tbsp - ¼ cup fresh lemon juice

Step by Step Instructions

Step 1
Chop all fresh herbs finely
Step 2
In a bowl, mix all the ingredients together.
Step 3
Allow mixture to sit for 5 minutes then mix again
Step 4
Check for flavour and salt. You should be able to taste mainly the parsley, but also the sweetness of the tomatoes and the tartness of the lemon juice. Adjust if needed by adding more lemon or salt.
Note
Serve with Ki's baked falafels and Ki’s Lemon Tahini Dill Sauce OR Jean-luc's famous garlic Caesar Sauce.
