Ki’s Shepherd’s Pie

Ingredients

  • 4 cups brown or green lentils (the package says green but the lentils are tan in colour), cooked to slightly softer than al dente (do not allow lentils to get mushy soft).
  • ½ tsp each of the following spices.. cinnamon, onion powder, garlic powder, smoked paprika, ginger, dried mustard, rubbed thyme (all to taste)
  • pinch of nutmeg and ground clove
  • 2 tbsp tamari sauce
  • 1 tbsp tomato paste
  • 3 cups frozen mixed vegetables defrosted

Step by Step Instructions

Step 1
In a large bowl place the lentils and add the spices to taste, tamari and tomato paste and mix well.
Step 2
In an oven proof dish, layer the lentils to cover the bottom of the dish.
Step 3
Layer the vegetables on top of the lentils.
Step 4
Dollop the mash on top of the vegetable spreading it to cover the vegetables
Step 5
Bake at 400F for 30-35 minutes or until topping turns brown around the edges and slightly over the top surface.
Step 6
Allow to sit for 10 minutes before serving
