Ki’s Baked Blueberry Oatmeal

Ingredients

  • 1/2 cup rolled oats (not quick oats)
  • 1 cup blueberries (frozen)
  • 1/8 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp vanilla extract.
  • 1 Tbsp monk fruit
  • 1 Tbsp each walnuts and pumpkin seeds all raw and unsalted
  • 1/3 cup + 1 Tbsp non-dairy milk
  • 1/2 tsp each cinnamon and cardamom (latter optional)
  • 1 Tbsp unsweetened dairy free yogurt

Step by Step Instructions

Step 1
Preheat oven to 375 F, line a baking tray with parchment paper OR grab an oven safe dish.
Step 2
In a bowl, mix all the ingredients together. Mixture should feel damp, but not wet. Blueberries will add moisture while cooking.
Step 3
Empty mixture into an oven safe dish or baking tray, place it on a rack in the middle of the oven, and bake for 20-25 min.
Step 4
Oatmeal is finished after 20-25 min and slightly brown on top.
Step 5
Serve with 1 Tbsp unsweetened dairy free yogurt

You may adjust spices to taste at any time.

    What’s the baking tray and parchment for? Is it to put the oven safe dish on before baking
