Ki’s Baked Blueberry Oatmeal

- 1/2 cup rolled oats (not quick oats)
- 1 cup blueberries (frozen)
- 1/8 tsp nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp vanilla extract.
- 1 Tbsp monk fruit
- 1 Tbsp each walnuts and pumpkin seeds all raw and unsalted
- 1/3 cup + 1 Tbsp non-dairy milk
- 1/2 tsp each cinnamon and cardamom (latter optional)
- 1 Tbsp unsweetened dairy free yogurt
Step by Step Instructions
Step 1
Preheat oven to 375 F, line a baking tray with parchment paper OR grab an oven safe dish.Step 2
In a bowl, mix all the ingredients together. Mixture should feel damp, but not wet. Blueberries will add moisture while cooking.Step 3
Empty mixture into an oven safe dish or baking tray, place it on a rack in the middle of the oven, and bake for 20-25 min.Step 4
Oatmeal is finished after 20-25 min and slightly brown on top.Step 5
Serve with 1 Tbsp unsweetened dairy free yogurtNote
