Ki’s Strawberries ‘N Cream Chia

Ingredients

  • 16 ounces of fresh strawberries hulled
  • 1-½ cup soy milk (or other non-dairy milk)
  • 2 tbsp vanilla extract
  • ground cinnamon to taste
  • ¾ tsp fine lime zest
  • ¼ cup chia seeds
  • ¼ cup sliced almonds

Step by Step Instructions

Step 1
In a large bowl add milk, vanilla, cinnamon, lime zest and chia and whisk together thoroughly
Step 2
Let the mixture stand for 10 minutes and then whisk again.
Step 3
Cover and refrigerate for at least 4 hours.  It will last up to 4 days covered in the fridge.
Step 4
To serve, stir the pudding, then layer the berries, chia and almonds and repeat the layers.  Drizzle with maple syrup or raw honey if necessary.
Note
Before making the layers, if you find the pudding is too thick, whisk in a little water or more non-dairy milk to thin it out.
