Ki’s Baked Falafels

LunchIngredients
- 1 can or 2 cups chickpeas cooked
- 1 can or 2 cups fava beans cooked
- 1 handful each of fresh flat leaf parsley and cilantro chopped
- 1 heaping tbsp fresh mint chopped
- 4 cloves garlic peeled
- 3-6 tbsp oat flour
- olive oil (for your hands)
Step by Step Instructions
Step 1
Preheat your oven to 350 deg F, Line a baking sheet with parchment paper and lightly grease the paper.Step 2
Put all ingredients except the flour and oil in a food processor. Pulse and scrape down the sides until the mixture is crumbly. Sprinkle 3 tbsp of oat flour and pulse again. The mixture is ready when you can form a ball without it sticking to your hands. You may sprinkle in 1 tbsp of flour at at time if the mixture is still stickyStep 3
For the falafel, scoop out 1-1/2 tbsp of mixture and roll in the palm of your hand that has been greased with the oil into a ball. Place on the pan and flatten slightlyStep 4
Repeat this process until all the mixture has been rolled out. Bake in the oven for 15 minutes, then rotate the pan and bake for another 15 minutes until slightly brown on bottom and firm on top. Falafels will firm up as they cool.Step 5
