Ki’s Pina Colada Chia

Ingredients

  • ⅓ cup coconut milk
  • 1 cup soy (or other non dairy) milk
  • ¼ cup chia seeds
  • 1 tbsp maple syrup
  • 2 tsp vanilla extract
  • ground cinnamon, ginger and nutmeg to taste
  • 2 tbsp unsweetened coconut flakes or unsweetened shredded coconut
  • 1-½ cups canned pineapple chunks (packed in water)

Step by Step Instructions

Step 1
In a medium bowl add all the ingredients except the canned pineapple. Whisk together.
Step 2
Cover and refrigerate 6 hours or overnight.
Step 3
Just before serving, drain the pineapple chunks and add to the mixture.
Step 4
To serve you can top with Ki's (click to access recipe) or Jean-Luc's granola (click to access recipe).
NOTE
To make the chia more fluffy add more non-dairy milk, stir and wait 5 min to serve.
