Ki’s Chocolate Chia Mousse

Ingredients

  • 6 tbsp chia seeds
  • 1 can coconut milk
  • 1 cup almond or oat milk
  • 2 tbsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp cardamom and nutmeg
  • 1 tsp ground ginger
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup or monk fruit
  • 1 tbsp roasted hazelnuts (optional)

Step by Step Instructions

Step 1
In a large mixing bowl, combine all dry ingredients and mix well
Step 2
Stir in the can of coconut milk but make sure to shake it well first.
Step 3
If the mixture looks like a thick paste add almond/oat milk 1/4 cup at a time until mixture is the consistency of pancake batter
Step 4
Taste and adjust the spices to your liking
Step 5
Mix well and store in the fridge uncovered for 20-30 minutes. It should be light and fluffy once set. If not add more milk and put it back in the fridge for 15 min
