Ingredients

Mango Salad

  • 2 half ripe mangoes, peeled and cut into chunks **note - mangoes should not be soft and squishy, they should be tender and not taste sour.
  • 1 small red onion or 2 shallots peeled and cut into slivers
  • ½ cup fresh cilantro chopped
  • ½ fresh Thai basil chopped (if you can find it)
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 hot banana pepper cut into thin rings or 3 pimento peppers diced
  • â…“ cup toasted pumpkin seeds
  • ¼ cup crushed toasted peanuts or almonds (optional)
 

Dressing

    • 1 Tbsp rice vinegar
    • 1 Tbsp Tamari sauce
    • 1 tsp fresh ginger minced
    • 2 cloves garlic smashed and minced
    • ¼ tsp red chili flakes
    • ¼ cup water
    • 2 limes juiced and zested
    • 1 Tbsp maple syrup
    • Sprinkle of salt and black pepper

Step by Step Instructions

Mango Salad
Mix all the ingredients for the mango salad together in a bowl, hold back the nuts and dressing.
Dressing
Combine all ingredients for the dressing in a bowl. Mix well and taste. It should be mildly sweet, sour and salty all at the same time.
Serving Mango Salad
Gently toss mango and dressing to combine well. Sprinkle with nuts. Allow to sit for 15 minutes before serving. Then toss one more time before serving. Serve slightly chilled or room temp.
