Mango Salad
- 2 half ripe mangoes, peeled and cut into chunks **note - mangoes should not be soft and squishy, they should be tender and not taste sour.
- 1 small red onion or 2 shallots peeled and cut into slivers
- ½ cup fresh cilantro chopped
- ½ fresh Thai basil chopped (if you can find it)
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 hot banana pepper cut into thin rings or 3 pimento peppers diced
- â…“ cup toasted pumpkin seeds
- ¼ cup crushed toasted peanuts or almonds (optional)
Dressing

- 1 Tbsp rice vinegar
- 1 Tbsp Tamari sauce
- 1 tsp fresh ginger minced
- 2 cloves garlic smashed and minced
- ¼ tsp red chili flakes
- ¼ cup water
- 2 limes juiced and zested
- 1 Tbsp maple syrup
- Sprinkle of salt and black pepper
