Ingredients

  • â…“ cup old fashioned rolled oats or steel cut oats (NOT the quick cook or instant)
  • 2 tsp chia seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp walnuts chopped (optional)
  • 1 tbsp non-dairy unsweetened vanilla yogurt
  • â…” cup pumpkin puree (not pumpkin pie filling)
  • 1 cup non-dairy milk
  • 2 tsp vanilla extract
  • sprinkle of cinnamon
  • sprinkle of nutmeg
  • sprinkle of ginger
  • sprinkle of clove
  • 1 tsp maple syrup for serving

Step by Step Instructions

Step 1
Put all the ingredients except the maple syrup in a large mixing bowl. Mix well
Step 2
Pour mixture into a large mason jar and seal.
Step 3
Store in the fridge for up to 5 days.
Step 4
When ready to serve drizzle the maple syrup over the heated overnight oats
Note
Overnight oats will become thicker as each day passes so if you desire, you can add a bit more non-dairy milk to thin it out. Serve either at room temperature or heated up in the microwave.
