Ki’s Peach Oat Bake with Yogurt Sauce

Ingredients

Ingredients:

  • 1 cup large flake oats (old fashioned rolled oats)
  • ¼ cup walnuts chopped
  • sprinkle of nutmeg, cinnamon and ground ginger to taste
  • â…“ cup + 3-½ tsp vanilla extract
  • â…“ cup non-dairy milk
  • 3 cups frozen peach slices
  • a drizzle of maple syrup (approx 2 tbsp)
  • ¼ cup of almond slices or pumpkin seeds
  • 1 cup of unsweetened non-dairy yogurt

Step by Step Instructions

Step 1
In a large bowl mix the oats, milk, walnuts, 1/2 tsp of vanilla and mix all together. 
Step 2
Add spices to taste and mix well.  Mixture should be damp but not wet.
Step 3
Pour into an oven safe dish that has been sprayed with nonstick spray and bake at 375 deg F for 20-25 min until golden brown.
Step 4
While the oats are baking, put peaches in a pot and cook on medium-high heat and add 2 large splashes of water.
Step 5
Sprinkle with spices and 1/3 cup of vanilla extract and cover. Allow to simmer and heat through.
Step 6
In a bowl mix the yogurt, the rest of the vanilla and maple syrup to taste.
Step 7
To serve, place the oats in a bowl, top with the warmed peaches and top off with the yogurt and almond or pumpkin seeds.
Note
Make sure to spoon out some of the peach juice and pour over the oats
