Step 1
In a large bowl mix all ingredients except the monk fruit and pecans. Mix well.
Step 2
Taste and adjust the seasoning to taste if required.
Step 3
The dough is ready when it can be formed into a ball when rolling in your hand. Add more flour if needed.
Step 4
In a separate bowl add the monk fruit and pecans and mix well. Roll the balls in the mixture so they are well coated.
Step 5
Place in the fridge for 1 hour to set.
Note
Store energy bombs in an air tight container in the fridge or freezer. Enjoy at room temp.
