Ingredients

  • 2 cups chickpeas cooked (1 can)
  • 2 celery stalks diced
  • 1 cup fresh dill chopped
  • 1 large carrot diced
  • ½ green pepper diced
  • 2 green onions/scallions finely chopped
  • 2 large tbsp vegan mayonnaise
  • ½ tsp mustard
  • nutritional yeast
  • salt & black pepper (to taste)
  • kala namak (black salt) optional

Step by Step Instructions

Step 1
In a large bowl add the chickpeas. Use a potato masher to mash leaving approx 1/4 of the chickpeas whole.
Step 2
Add the rest of the ingredients and mix well.
Step 3
The black salt adds the eggy taste to it so adjust the taste with this salt before adding the pink salt if it requires it.
Note
You can serve the faux egg salad in a roasted bell pepper with a green salad or on sourdough toast
