Ki’s Dark Chocolate Cherry Oat Bars

Ingredients

  • 2 cups old-fashioned rolled oats
  • ½ cup chopped raw unsalted almonds
  • ¼ cup raw unsalted sunflower seeds or pumpkin seeds
  • ¼ cup unsweetened coconut flakes
  • 1 cup frozen cherries (defrosted and drained of liquid)
  • 3 tbsp dark chocolate chips
  • ¼ cup ground almond meal/flour
  • ground cinnamon, nutmeg & ginger to taste
  • ½ tsp sea salt
  • â…“ cup ground flax
  • ½ - 1 cup non-dairy milk
  • 1 tbsp vanilla extract
  • ⅛ tsp almond extract
  • ½ cup maple syrup

Step by Step Instructions

Step 1
Preheat the oven to 350°F. Grease an 8- or 9-inch square baking pan and line with parchment paper.
Step 2
Place oats, almonds, seeds (not ground flax) and coconut flakes on a large baking sheet; toast for 12 to 15 minutes, checking often to avoid burning.
Step 3
In a large bowl, combine cherries, chocolate chips, almond meal, ground flax, cinnamon and salt.
Step 4
When the oat mixture is out of the oven, add to the bowl of cherry mixture; toss to combine. Mix non-dairy milk, maple syrup, vanilla and almond extract together and pour over the oat mixture. Using your hands, thoroughly mix all together well.
Step 5
Pour mixture into pan and press down with a spoon, spatula or damp hands. Bake until golden brown on top, about 20 minutes. The bar will be soft to the touch when it comes out of the oven but will firm up as it cools. Let cool completely, at least 2 hours. Cut into 8 squares and store in a covered container in the fridge or freezer.
