- 1 cup red cabbage shredded
- ¾ cup carrots shredded
- 1 cup baby kale finely chopped
- 3 ribs of celery stalks chopped
- 1 handful fresh flat leaf parsley chopped
- 1 handful fresh dill chopped
- salt & black pepper to taste

- 3 tbsp vegan mayonnaise
- 1 tbsp dijon mustard
- 2 sprigs scallions finely chopped
- sprinkle of granulated garlic
- 1 tbsp apple cider vinegar
- ¼ cup red wine vinegar
- drizzle of maple syrup
- salt and pepper to taste
