Ingredients

Coleslaw
  • ½ cup green cabbage shredded
  • 1 cup red cabbage shredded
  • ¾ cup carrots shredded
  • 1 cup baby kale finely chopped
  • 3 ribs of celery stalks chopped
  • 1 handful fresh flat leaf parsley chopped
  • 1 handful fresh dill chopped
  • salt & black pepper to taste
  • â…“ cup defrosted and shelled edamame (optional)
  Dressing
  • 3 tbsp vegan mayonnaise
  • 1 tbsp dijon mustard
  • 2 sprigs scallions finely chopped
  • sprinkle of granulated garlic
  • 1 tbsp apple cider vinegar
  • ¼ cup red wine vinegar
  • drizzle of maple syrup
  • salt and pepper to taste

Step by Step Instructions

Step 1
In a small bowl, whisk the mayo, mustard, vinegar and maple syrup together.
Step 2
Add salt and pepper to taste
Step 3
In a large bowl, add the vegetables and herbs and mix together. Then pour over the dressing and toss well to combine.
Step 4
Serve right away or rest in the fridge for 30 minutes before serving.
Note
You can store the leftovers in the fridge for up to 3-5 days.
