Macerated Pears
Step 1
Wash and thinly slice fruit and add to a medium potÂ
Step 2
Cover fruit with water and stew on medium low heat until water boils
Step 3
Reduce heat and mash fruit in the potÂ
Step 4
Simmer until fruit takes on a jam consistency
Step 5
Do not add more water
Thyme Syrup
Step 1
In a small pot add 2 cups of water and add in 1 full packet or 3 large bunches of thyme herbs
Step 2
Over medium heat let herbs simmer for approx 5 minutes
Step 3
In a jar, add 1 cup of white sugar
Step 4
Strain 1.5 cups of the herb water into a measuring cup
Step 5
Add 1.5 cups of her water to the jar
Step 6
Stir until sugar is melted and liquid is clear
Christmas Thyme
Step 1
In a rocks glass, build with pear then syrup then Gin
Step 2
Top with ice and stir.
Note
Thyme syrup can be stored in the fridge for up to 1 month
