Ki’s Chocolate BBQ Mushrooms

Ingredients

  • 4 portobello mushrooms
  • 1 tbsp cocoa
  • ½ tsp black pepper
  • ½ tsp cinnamon
  • 1 tsp ground garlic
  • 1 tsp smoked paprika
  • â…› tsp ground clove
  • 1 tsp Jamaican allspice
  • 1 tsp dried mustard
  • ½ tsp dried thyme
  • 2 tbsp tamari sauce
  • olive oil spray
  • salt to taste

Step by Step Instructions

Step 1
Preheat oven to 435F.
Step 2
Lightly wash mushrooms and trim stems to almost level with the base of the mushrooms. Set aside.
Step 3
In a mixing bowl combine all ingredients and mix well. Add 1/2-2/3 cup water to the mix and stir well. Taste and adjust seasoning to taste.
Step 4
In a baking dish that has been sprayed with olive oil spray and lined with parchment paper, place the mushrooms gills side up. Pour a bit of the spice mix on top, holding back enough to baste with.
Step 5
Place the dish in the oven and bake for 15 minutes.
Step 6
After the 15 minutes have completed, and the mushrooms have released water, flip them over. If they have not released their water, put them back in the oven for another 5 minutes. Then baste the top.
Step 7
Lower the heat to 375 F and bake for 10-12 minutes.
Step 8
Take the leftover spice mix and put it in a saucepan with a bit of water and bring to a boil for a sauce.
Step 9
Serve mushrooms over a bed of cauliflower mash with a side of cooked green beans. Drizzle with chimichurri sauce and some of the spice sauce.    
Note
If you cannot get portobello mushrooms use a few handful of brown/ cremini mushrooms
