Step 1
Put all ingredients except red wine vinegar in a blender and blend on high.
Step 2
Add oil and blend again.
Step 3
If the sauce is too thick, slowly drizzle in some of the red wine vinegar.
Step 4
The ingredients should be well blended. Taste for seasoning being that the main flavours are parsley, garlic and vinegar. Add what’s missing, mix well then allow to sit for 10 minutes then taste again. Sauce should be chunky, not smooth.
Note
Since chimichurri is an Argentinian steak sauce, serve this with anything that has bold rich flavours like Ki's bbq roasted portobello mushrooms.
