Ingredients

  • 4 cooked beetroots
  • 1 tsp sesame oil
  • 3 large shallots thinly sliced
  • 1 Tbsp fresh ginger or ½ tsp ground ginger
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 2 cloves garlic peeled and crushed
  • 3 green chillies kept whole with slits poked into them
  • 1 small handful fresh cilantro
  • 1 Tbsp lemon juice
  • ¼ cup almonds (optional)

Step by Step Instructions

Step 1
To a pan, add oil and saute shallots with ginger for 2-3 minutes on medium heat.
Step 2
Stir in the cooked beetroot chunks, cumin, coriander, garlic and green chillies and cook for 1-2 minutes.
Step 3
Finish with lemon juice, cilantro and sliced almonds.
